The cuisine is distinguished by meticulous research into the basic ingredients used, which is done with intense devotion. He then loves to introduce his public to these via his dishes and the way he brings these together. His flavours have the solid sense of the authenticity of his own memories and of local tradition, a pronounced creative streak on a firm foundation and which leaves room for appreciation of the products selected. Value is placed on the local area (products and seasonality).
The cuisine here combines a mastery of the craft of cooking with experimentation with new techniques so as to expand his personal portfolio in terms of ability. He believes in the capacity of emotion to enable him to give his guests the gift of the enjoyment of some peaceful, satisfying time. A dinner at Vicolo Santa Lucia may be likened to living through a whole range of certainties and memories which are linked to an awareness of the place and time in which we find ourselves, but at the same time "coloured" by aesthetic presentation which is full of life, where even the furnishings contribute to the building of the "memory" and to the appreciation of the "quality time" spent here
