Gourmet Region Austria – Paznaun Alpine Cheeses
Since 2007 Paznaun ranks among the Austrian “Genussregionen – gourmet regions”. The most popular products are the “Paznaun Alpine Cheeses” but apart from cheese, this region is also well-known for its air-dried bacon, sausages and honey.
GOURMET REGION AUSTRIA is a trademark, which shows consumers on the one hand which products are regional, agricultural products and specialties, and on the other hand, informs the general public about culinary offers in certain regions.
This symbiosis of regional origin and mode of production demonstrates the connection between cultivated landscape and food production. Regional specialties serve not only as a means of indulgence, but are also a sign of identity and affiliation. In Paznaun, tourism and agriculture especially, are linked very closely in the restaurants and the huts, where local agricultural produce is used, or on the alpine pastures, where only home-made specialties are served. The most popular is the Paznaun Alpine Cheese, which can not only be bought on the alpine pastures, but also in several grocery stores down in the valleys.
The Paznaun Alpine Cheese is produced solely from alpine and valley milk suitable for making hard cheese. The mature, light yellow cheese with its pea-sized holes can have all sorts of tastes from mildly aromatic to spicy. Cheese lovers can enjoy this regional highlight after the maturing time of six weeks as a special cheese delicacy. During a tasting the guest not only gets a piece of the best cheese, but also a small piece of the Tyrolean cultural landscape.
